Sukha Chatpata Aloo (Spicy Dry Potatoes Sans Onion And Garlic)

What do you do when you have nothing in the refrigerator to treat a surprise guest at your place? Yes, if you have only a few potatoes lying somewhere in the kitchen, you can serve a delightful meal with hot pooris and sukha chatpata aloo. I thought this post would be all the more apt with the Navaratras on because this delicious spicy potato is sans onion and garlic. It requires minimum time and fewer ingredients, everything that is readily available in the kitchen and is totally hassle free.

This is how I made it:
 



Ingredients:



  • 5 large potatoes cubed
  • 3 tsp jeera/cumin seeds
  • 1 tablespoon dhania/coriander seeds
  • 1/2 tsp Kashmiri red chili powder
  • 1 tsp amchoor powder/ dry mango powder
  • 3 green chilies chopped
  • Some freshly chopped coriander leaves
  • Salt to taste
  • A pinch of sugar to balance the taste
  • White oil as per requirement

Process:
 


Step 1:


Toast 2 teaspoons cumin seeds and 1 tablespoon coriander seeds on a tawa/pan. When fragrant remove from the heat and coarsely grind into powder with a rolling pin.


Step 2:


Heat oil in a wok and splutter 1 tsp cumin seeds and add the potatoes. Fry on high heat for a few minutes.


Step 3:


Add all the powder spices including the ground masala, salt and sugar. Stir well, sprinkle a little water so that the masalas don’t get burnt and cover with a lid. Let the potatoes cook on low flame for about 7 -8 minutes. It should be done by then.

Step 4:



When the potatoes become soft, sprinkle green chilies and coriander leaves, serve hot with pooris or paranthas.
